Barley with Mushroom Broth & Mushrooms

6 lbs barley
1 case portabello mushrooms
1 large bag dried shittake mushrooms.

  1. The night before, put dried shittake mushrooms to soak in twice their volume of water
  2. wash and cut up fresh mushrooms
  3. Cut up shittake (reserving liquid)
  4. Add mushroom broth mix if necessary to water, add water if necessary to provide enough
  5. place mushrooms in broth mixture and cook for about 5 minutes
  6. mix 2 parts broth with one part barley
  7. bake or simmer for about 45 minutes to an hour until done.
