Greens with Vinegar and Oil
Inquisition

The
book Drizzle of Honey quotes an Inquisition account referencing "lots of conversa
women sitting by the doors of their houses eating greens with
vinegar."
- 2 heads red looseleaf lettuce
2 heads green looseleaf lettuce
- 1 head mustard greens
16 oz baby spinach
- Fresh Herbs:
half bunch rosemary
bunch basil
6-7 stems sage
handful thyme leaves
1 bunch spearmint
2 bunches parsley
- Olive Oil
- Red Wine Vinegar
- Wash the greens
- Chop the herbs into small
pieces
- Rip up the greens into pieces
- Mix greens and herbs in a
large tub
- Plate into bowls
- Add oil and vinegar to taste
Salad ingredients are inspired by period salad recipes from other
cultures.
